  • 3 cup cubed watermelon
  • 2 tomatoes
  • 1 cucumber
  • 2 cup arugula
  • 1 small red onion
  • 1/3 cup feta cheese
  • 1/2 cup toasted pine nuts
  • Olive oil
  • Red wine vinegar

Instructions

  • Preheat oven to 350 degrees.
  • Place pine nuts on a sheet pan.
  • Toast until light brown.
